Quick Chocolate-Potato Fudge

3 squares chocolate (2 sweet and 1 unsweetened)
3 tbsp. butter or margarine
1/3 cup mashed potato
1/8 tsp. salt
1 tsp. vanilla
4 cups sifted icing sugar (approximate)
Melt chocolate and butter over hot water. Add the mashed potato, salt and vanilla. Blend in sugar. Knead until smooth. Shape into a long roll about 1 inch in diameter. Cool and cut into slices.
Variations: Try 3 ounces of semi-sweet chocolate chips instead of the squares. You can also use butterscotch, peanut butter or chocolate mint.
