Through most of the 20th century, Toronto's taste for beer was satisfied primarily by the products of industrial breweries, especially Labatts, Molson and Carling-O'Keefe. But towards the end of the 1900s a renewed interest in the unique tastes of beer prepared in small 'micro' breweries took root. Some of these breweries were created to supply beer to a single restaurant/pub. Others brewers developed operations that could supply the local Toronto market, but remained committed to maintaining a scale where the unique character of their product was not threatened by becoming too large.
